The stories of Fossey’s creating our own Rum has long been rumoured, with strong encouragement from our fine selves, and as the release of this drop comes nearer, we thought we would further the excitement by laying down some of our original Gin in our Red Gum Rum barrel.
After over 2 years of patiently waiting, our Red Gum Rum has nicely matured leaving the most fabulous of flavours and colour behind in it’s barrel and allowing us the perfect resting home for our Original Gin.
Australian Gin, Australian Rum and one of the most iconic Australian tree’s being the Red Gum, you simply couldn’t get a drop with more joyful nostalgia than this.

We first met our bearded chilli guy when he reached out to be the beard judge of our first ever Best beard Competition as part of our World Gin Day Laneway Festival.
After becoming a fast friend of us here at Fossey’s, Bonus (the bearded chilli guy) mentioned that he was a prolific grower of chilli’s of all varieties and would we be interested in creating a chilli gin.
Without hesitation, our distiller began the process of trial and error and much experimentation of method and chilli varieties.
Things started to heat up in the Distillery when the latest batch of Chilli Gin caught the attention of our staff and patrons alike and the professional tasting panel gave the nod of approval.
Using a locally grown blend of Cardi Scorpion and Ghost Chilli’s both with their own unique flavour and zing, our Chilli Gin has the most spectacular way of bringing up the heat to “holy wow what’s happening here”, then bringing it back to a perfect balance of lasting tingle and flavour.
A conversation Gin indeed that will leave you mesmerised and wanting more.
We absolutely love this Gin served simply with tonic however why try it in your own version of a Bloody Mary for a little extra kick.
